DESCRIPTIONDefatted and alkalised cocoa powder. The fermented ‘Theobroma cacao’ beans are stripped of their alkalised husk and roasted. The cocoa paste is obtained by grinding. The paste is pressed and the defatted cakes are obtained. The cocoa cake is then ground to obtain alkalised cocoa powder.
